1 - Mediterranean tonic
Mediterranean tonic
With Mediterranean tonic, it is better to use a citrus gin or a more herbaceous gin. Mediterranean tonics bring some subtle citrus and fresh notes (ex: thyme and rosemary). There are also smaller bubbles (similar to champagne) than in classic tonics, bringing a rounder and smoother flavor.
Recommended garnish: Slice of grapefruit or lemon and sprig of rosemary.
2 - Classic tonic
Classic tonic
With classic tonic, it is better to use a drier gin (London dry gin) but this tonic is suitable for any variety of gin. The classic tonics are the most usual and they bring a nice bitterness that perfectly complements the taste of all gins.
Recommended garnish: Lemon, grapefruit or cucumber slice.
3 - Light tonic
Light tonic
With light tonic, it is better to use a more pronounced gin (ex: aged or juniper berry-based gin) but this tonic is suitable for any variety of gin. The light tonics bring the same traditional taste and the same bitterness as the classic tonics but they are lighter in calories thus leaving more room for the dominant flavors present in some gins.
Recommended garnish: Slice of grapefruit or orange.

"Orée gin offers you a taste of an ingredient as unique as it is surprising: pin cherry bark. Joseph, our master distiller, harvested branches of this small tree, common in Gaspésie, in the spring of 2021 and then used its cambium, the living part of the wood where the sap flows. Macerating this bark in our Récif gin gives it a golden hue and transforms its aromatic profile.
Orée is an Old Tom gin to be savoured like a whisky or a fruit brandy. On both the nose and the palate, it offers notes of fresh wood, burnt sugar, vanilla, cherry and candied plum. On the palate, it reveals a honeyed side accompanied by a minty freshness and the light resinous bitterness of juniper berry. The warm, peppery spices typical of our Récif gin emerge on the finish."
