When we say that a gin is made from the raw material to the bottle, it means that the manufacturing process is done entirely in the distillery. So the base alcohol used was made and distilled in the distillery, then processed using botanicals to create a gin, all on the spot. The raw material can be grain, honey, maple, fruits, berries, whey and more.

1 - Light tonic
Light tonic
With light tonic, it is better to use a more pronounced gin (ex: aged or juniper berry-based gin) but this tonic is suitable for any variety of gin. The light tonics bring the same traditional taste and the same bitterness as the classic tonics but they are lighter in calories thus leaving more room for the dominant flavors present in some gins.
Recommended garnish: Slice of grapefruit or orange.
2 - Mediterranean tonic
Mediterranean tonic
With Mediterranean tonic, it is better to use a citrus gin or a more herbaceous gin. Mediterranean tonics bring some subtle citrus and fresh notes (ex: thyme and rosemary). There are also smaller bubbles (similar to champagne) than in classic tonics, bringing a rounder and smoother flavor.
Recommended garnish: Slice of grapefruit or lemon and sprig of rosemary.
3 - Elderflower tonic
Elderflower tonic
With elderflower tonic, it is better to use a fresher gin (ex: cucumber) or a more floral gin. Elderflower tonics provide additional floral flavors that complement the flavors of the gin well.
Recommended garnish: Lemon slice.
4 - Classic tonic
Classic tonic
With classic tonic, it is better to use a drier gin (London dry gin) but this tonic is suitable for any variety of gin. The classic tonics are the most usual and they bring a nice bitterness that perfectly complements the taste of all gins.
Recommended garnish: Lemon, grapefruit or cucumber slice.

"Built on a base of Quebec barley and malted wheat, our artisanal Les Herbes Folles gin is brewed and fermented on site. The wort, double-distilled in a copper column still, produces a smooth, mellow and pure spirit.
The resulting base spirit is then redistilled to infuse it with the aromas of about ten wild herbs hand-picked in Gaspésie. Finally, the gin is refined in oak barrels before being bottled, like a precious handmade product, from picking to bottling."
