1 - Classic tonic
Classic tonic
With classic tonic, it is better to use a drier gin (London dry gin) but this tonic is suitable for any variety of gin. The classic tonics are the most usual and they bring a nice bitterness that perfectly complements the taste of all gins.
Recommended garnish: Lemon, grapefruit or cucumber slice.
2 - Light tonic
Light tonic
With light tonic, it is better to use a more pronounced gin (ex: aged or juniper berry-based gin) but this tonic is suitable for any variety of gin. The light tonics bring the same traditional taste and the same bitterness as the classic tonics but they are lighter in calories thus leaving more room for the dominant flavors present in some gins.
Recommended garnish: Slice of grapefruit or orange.

The company Les Spiritueux Chevaliers worked in collaboration with the distillery Les Subversifs to produce the gin Catalyst.
"Catalyst Gin means complexity treated with simplicity. Our gin is carefully distilled to extract all the aromatics included in our chemist’s recipe.
The originality of Catalyst Gin is based on a mixture of terpenes, mainly sesquiterpenes which have fascinating properties. In Quebec, we are fortunate to have several aromatics that contain them with truly unique molecules. We can even find these terpenes as much in fruity aromatics as in peppery and herbaceous ones, which allows a perfect balance in the flavors that characterize our gin which avoids having a predominant flavor. The marriage between the terpenes that make up the base of the gin and those of our aromatics creates a complex, unique and delicious mix for your taste buds."
